Rapunzel Theme Party Food – Witches’ Froth

Witches’ Froth

You will need: (for 4 people)

6 bananas, peeled
3 tablespoons lemon juice (this will keep the bananas from turning brown)
1¼ cup  (300 ml) fruit yogurt
4 tablespoons sugar
2 egg whites
150 ml heavy cream
2 oz (50g) chocolate

Mash the bananas to a pulp with a fork, adding the lemon juice as you mash. Transfer to a large mixing bow. Add the yogurt and sugar. Mix well. In a medium-sized bowl, beat the egg whites with an electric mixer until they are stiff. In another mixing bowl, beat the cream until it is thick.

Using a metal spoon, gently stir a spoonful of cream into the banana mixture, then a spoonful of egg whites. Continue doing this until all the cream and egg whites have been added and the ingredients are well mixed.

Place the dish in the refrigerator and leave the mixture to chill for 30 minutes. Pile the froth into small plastic cups or glasses and place back into the refrigerator until it is time to serve it. Grate the chocolate on the fine side of a grater, remove the banana froth from the refrigerator and sprinkle with grated chocolate.

Decorate the froth with a witch’s hat
